The Beijing cuisine is also called ‘Capital City cuisine’ or ‘Mandarin Cuisine’. Beijing has been the Chinese capital city for centuries. Most dynasties came from the North of China. Therefore the dishes in the Beijing Cuisine are dominated by meat dishes.
